A really great one dish meal for a buffet or family get together
that can be assembled the day before.
Serve with a tossed salad and rolls or crusty bread.
Ingredients:
2 cups Creamettes macaroni (uncooked)
2 cups chunk chicken (canned or 1 whole chicken cooked and chopped)
2 cans mushroom soup or 1 can mushroom and 1 can cream of chicken
1 cup of chicken broth
1 small can mushrooms
1 chopped onion
1/2 lb. Velveeta cheese
2 hard cooked eggs chopped chunky
Directions:
Mix all ingredients together. Cover and let stand in refrigerator overnight.
remove from fridge and let stand at room temperature 1 hour.
Bake 1 hour at 325 degrees or until lightly browned and bubbly. Serves: 12
This is a great one pot dish that is easy and very good.
Ingredients:
7 pork chops
2/3 cup of water
6-8 small potatoes
6-8 carrots, split lengthwise and cut into 2" pieces
1 1/2 cans of tomato soup
2 tsp. worchestire sauce
1 tsp. salt
oil
Directions:
In a saucepan, brown the pork chops in just enough oil to coat
the pan. Drain away the grease.
Add the rest of the ingredients. Cover and simmer for about 45
minutes or until the vegetables are tender.
Easy and tasty fixens for a busy day lunch or supper.
Ingredients:
1 lb. ground beef
1/4 tsp salt
1 thick prebaked Italian bread (pizza) shell (12 inch diameter)
1 1/4 cups of mild thick and chunky salsa
1 1/2 cups of shredded Mexican cheese blend or Monteray Jack cheese
(about 6 oz.) divided
1 (4 oz.) can of diced green chilles, well drained
2 plum tomatoes, seeded and coarsely chopped
1/2 cup thinly sliced red onion
2 T. chopped fresh cilantro (optional)
Directions:
Cook ground beef in non stick skillet over medium heat 8 to 10 minutes,
or until meat is no longer pink, stirring to break apart into 3/4 inch crumbles.
Season with salt. Remove from skillet with slotted spoon.
Place bread shell on ungreased pizza or large baking sheet. Spread salsa over shell.
Sprinkle half of the cheese over salsa. Top evenly with beef, green chilles, tomatoes, red onion and remaining cheese.
Bake in a preheated 450 degree oven 11 to 13 minute, or until topping is hot and cheese is melted.
Sprinkle with cilantro, if desired. Cut into wedges and serve at once.
Roll crescent roll dough flat on ungreased cookie sheet and bake at 350 degrees 11 to 13 minutes.
Mix cream cheese and rest of ingredients. Spread on cooled crust.
Top with raw vegies (carrots, cauliflower, broccli, chopped small.
Sprinkle about 3/4 cup of shredded cheese over all. refrigerate until ready to serve.
A main dish, for a luncheon or supper, to be served with crusty bread
and presented in a tomato, green pepper, bed of lettuce or hollowed out bread shell.
Ingredients:
1 - 4 cups diced Chicken
1 cup diced Apples
1/4 cup chopped Green Onions
1/2 cup Grapes
1/4 cup chopped Green Peppers
1/4 cup chopped Celery
2 Tbsp Mayonnaise
1/2 cup Raisins
1/2 cup Sour cream
1/2 cup chopped Walnuts
1 tsp Lemon Juice (for apples)
Paprika
1/2 tsp Basil or Rosemary
White Zinfandel or white cooking wine
Salt and Pepper to taste
Directions:
Buy frozen, cooked and diced chicken or poach frozen chicken tenders
in one can of chicken stock with some wine.
Remove from poaching liquid (this saves fat calories). Place cooked chicken in fridge to chill.
Next, in a large bowl, combine mayo, sour cream, walnuts, raisins, diced apples (tossed in lemon juice),
celery, onion, green pepper, basil, salt and pepper and wine (to thin the mayo and add flavor).
Now add the the cold chicken pieces and toss. Garnish with parsley or celery tops and paprika.
This is a very satisfying main dish. Colorful, crunchy, creamy and delicious!
