Harvest Cake
Cake is moist and filled with apples and nuts. It freezes wonderfully,
so it can be made a long time in advance.

Combine and let stand one hour:
4 cups of diced fresh apples
2 cups sugar
Beat in large bowl: 2 eggs
Add : 1 cup oil and 1 tsp vanilla
Stir in apple mixture.
Combine:
3 cups of flour
1 tsp soda
1 tsp salt
1 tsp nutmeg
1 tsp cinnamon
Stir-do not beat- into apple mixture
Stir in 1 cup chopped walnuts and pour into greased and floured tube pan.
Bake at 350° for one hour or until done.
